A proper борщ is a project: beets, cabbage, root vegetables, usually meat stock, a spoon of smetana melting on top, black bread alongside, and strong opinions at the table about whose recipe is correct. Ukraine's claim to the dish is historical and now official (UNESCO listed Ukrainian borscht culture in 2022); the soup itself has long since naturalized everywhere east of Berlin.
The Yiddish route into English explains the spelling: борщ ends in the single letter щ, which Yiddish and then English rendered as -shcht/-scht. The Borscht Belt, the Catskills resort region of mid-century Jewish comedy, carries the soup's name into American cultural history.
The word as a word
A masculine noun ending in щ: боршч is how the sound unpacks (sh-ch fused). Genitive борща with the stress jumping to the ending: тарелка борща, a plate of borscht, is the phrase you will actually use, and it is a partitive-genitive lesson served hot.
Watch out
