What does nostrovia mean? (Not what the movies think)

Nostrovia is a garbled form of на здоровье, which Russians say when thanked for a meal, not when they raise a glass.
Nostrovia is Hollywood Russian. The real phrase, на здоровье, means roughly to your good, and it is what you say when someone thanks you for food or hospitality: a you're welcome, not a toast. Russians raising glasses say за здоровье, за вас, or a toast built for the moment.

The myth is sturdy because the phrase is real; only the job is wrong. Grandmother sets down the soup, you say спасибо, she says на здоровье. Nobody clinks anything. The movie scene where the table roars nostrovia is a scene Russians only ever see in foreign movies.
Real toasting runs on за + accusative, to...: за здоровье (to health), за вас (to you), за встречу (to our meeting), за любовь (to love). Toasts are a genre Russians take seriously: at a real table they are short speeches with a point, not one-word shouts.
The word as a word
The confusion is a case lesson in disguise: на здоровье takes the accusative after на (here: for your benefit), while toasts take за + accusative (in exchange for, in honor of). One preposition swap separates you're welcome from bottoms up, which is exactly the kind of thing cases are for.
Watch out
Saying nostrovia as a toast marks you as a tourist instantly and affectionately. If you want one safe, real toast, за здоровье (za zdorovye, to health) is correct, короткий and always welcome. За вас (to you all) is the graceful second.
